With all the panels and tasting events that have come with the new season, we’ve talked to a lot of chefs recently. So we’ve had the chance to ask them some questions, namely what they’re AlwaysHungry for and what their current favorite New York City restaurant is. Following is the latest installment of AlwaysHungryNY.com’s occasional feature, HungryChefs.

AlwaysHungry for: “Cesare [as Cesare Casella approached]. Look at how good looking he is.”
Favorite Restaurant: “I don’t have one.”

Anne Burrell (Food Network)
AlwaysHungry for: “Bacon, anything with bacon. And pasta. A Bolognese.”
Favorite Restaurant: Babbo and Momofuku Ssäm Bar.

Paul Di Bari (Bar Sutzzichini)
AlwaysHungry for: “Octopus at Casa Mono and quail at dell’anima.”
Favorite Restaurant: Lure Fishbar.

 

Andrew Carmellini (right, Locanda Verda)
AlwaysHungry for: “The tacos at Mercadito Cantina.”
Favorite Restaurant: Kyo Ya.

Michael Sullivan (Eater.com selected competitor)
AlwaysHungry for: “Pizza at my house. I have three kids and they like getting involved in the process.”
Favorite Restaurant: “Chanterelle, it’s gone but it’s still in my heart.”

Favorite Restaurant: “SriPraPhai, because it’s freaking awesome.”

AlwaysHungry for: Pork belly, sweetbreads, foie gras.
Favorite Restaurant: Sushi Seki for their Spicy Scallop handroll.

 
 

Marco Canora (right, Hearth)
AlwaysHungry for: “Breaded meat. The Breaded Veal Milanese at Bar Pitti, and I don’t need to be hungry to eat it and that’s a problem.”
Favorite Restaurant: Sorella.

Dave Martin (Top Chef Season One)
AlwaysHungry for: Pizza. His favorite places for it are Manducatis Rustica and Motorino.
Favorite Restaurants: Landmarc and Houston’s.

 
 

Christopher Lee (right, Aureole)
AlwaysHungry for: “Chicken fingers. I challenge anyone to make a great chicken finger. My wife hates it, but I love them. Atomic wings makes a good chicken finger. Hey, I’m easy to please.”
Favorite Restaurants: Three favorites: Il Bagatto, Boqueria and DBGB Kitchen & Bar.

Chai Trivedi (Pranna)
AlwaysHungry for: Drunken Noodles. He said his are the best, but besides his he likes SriPraPhai’s.
Favorite Restaurant: Blue Ribbon Sushi because “they stay open late for chefs.” He loves their Scorpion rolls, sake and pickles.

 

Brian Bistrong (right, Braeburn)
AlwaysHungry for: Korean food, and “Bacon, I could eat that everyday.”
Favorite Restaurant: Do Hwa.

Patrick Connolly (Bobo)
AlwaysHungry for: Corned Beef Special, specifically from Sarge’s.
Favorite Restaurant: Mary’s Fish Camp for their fried sardines and pickles.

AlwaysHungry for: Pork belly.
Favorite Restaurant: “I always have to go for bone marrow at DBGB Kitchen & Bar. It’s just so delicious.”

Michael Cressotti (Corporate Chef, SushiSamba)
AlwaysHungry for: Octopus, served either seared a la plancha or confit.
Favorite Restaurant: Casa Mono for their cockscombs, sweetbreads, chicken liver, and tripe.

 

Cesare Casella (right, Salumeria Rosi)
AlwaysHungry for: “It changes depending on my mood. But I like to go out for sushi about three times a week.”
Favorite Restaurant: “My favorites for sushi are Yasuda, 15 East, Morimoto and Sushi Seki.”

Lon Symensma (Executive Chef, Buddakan)
AlwaysHungry for: Mussels, Chicken Wings, Mac & Cheese, and Au Gratin Potatoes.
Favorite Restaurants: Kesté Pizza & Vino, Blue Smoke, Co., Txikito, and Stanton Social (for their French Onion Soup Dumplings).

 

John DeLucie (right, The Waverly Inn)
AlwaysHungry for: “Tiramisu. The thing about tiramisu is that even when it’s bad, it’s still pretty good.”
Favorite Restaurant: “Keste. I love the pizza. I’m going there tonight.”

Stephane Dorian (owner, 10 Downing)
AlwaysHungry for: Whole Roast chicken at 10 Downing.
Favorite Restaurant: Any of the Bouley restaurants.

 

Ming Tsai (right, Blue Ginger)
AlwaysHungry for: Braised pork belly.
Favorite Restaurants: Shang, Chinatown Brasserie, China Grill, Tanuki Tavern, Nobu Fifty Seven, Daniel, and “every Mario restaurant.”

Chris Jaeckle (sous-chef, Morimoto)
AlwaysHungry for: Singapore-style Pan-fried Noodles (because they have “heat, shellfish and a lot of MSG”), and anything with bacon.
Favorite Restaurants: The best meals he has had in the last two years were at Eleven Madison Park and Corton. His go-to restaurants are Frankies 17 Spuntino and Ramen Setagaya.
Notes: Jaeckle’s favorite dishes at Morimoto are the ramen (he said it’s underrated) and the Buri Bop, a Japanese spin on Korean Bibimbap.

 

Brian Murphy (right, The Mott)
AlwaysHungry for: “I’m a sucker for fried chicken.”
Favorite Restaurant: In New York: Dressler and Picholine. In San Francisco, Salt House.

Fabio Viviani (Top Chef Season Five)
AlwaysHungry for: Risotto.
Favorite Restaurant: Craftsteak, Union Square Café, and New York City hot dog stands.

 
 

Jacqueline Lombard (right, Gansevoort 69)
AlwaysHungry for: Pancakes (her own) and fake maple syrup (something she said her grandmother, who eats everything diet, always has on hand).
Favorite Restaurant: “Perilla. They make really yummy duck.”

Sebastiaan Zijp (Bar Blanc Bistro)
AlwaysHungry for: Anything intensely house-made, slow food, braised meats.
Favorite Restaurant: Ippudo NY, Village Yokocho.

AlwaysHungry for: Pig’s Foot.
Favorite Restaurant: DBGB Kitchen & Bar for pig’s foot, WD-50 for lamb, and Caracas Arepa Bar for ceviche.
